Hashbrowns
1-2 potatoes, grated, rinsed and drained
1/2 green bell pepper, diced
1/2 onion, diced
1/2 tsp salt
1/2 tsp paprika
1/2 tsp onion powder
1/2 tsp garlic powder
1 tsp evoo
Saute all ingredients in pan for about 15-20 minutes, top with salsa.
Lunch with clementines.
I couldn't figure out what to do for dinner so I tried to see what I had in the fridge that I could throw together and here is it.
Quinoa Salad
2 cups cooked, chilled quinoa
1 cup broccoli florets
1/8 cup sliced red onion
1/2 cup grape tomatoes
2 Tbsp pine nuts
1 tsp evoo
1/2 tsp lemon juice and zest of 1 lemon
B: hashbrowns with salsa and grapes
L: rice cakes with banana and peanut butter, clementines
D: quinoa salad
S: corn chip and salsa
